Granny’s Skillet … and cooking “Low Carb Primal”

Update 9/2/2011  –  while I still do eat more salads than I did ‘pre-diabetes’ …  I mainly eat meats.  The vegetables if I do eat them are more of a side dish now. :)

Since going Primal, I eat more salads than I did pre-diabetes … but I eat many other meals as well. The salads that I do eat, are always with a meat added such as chicken, steak, ham, turkey, canned salmon etc. For the salad dressing typically I use Extra Virgin Olive Oil (EVOO) and I may or may not add Apple Cider Vinegar.

While I mainly eat meats and veggies … occasionally I’ll cook something ‘fancy’. :) There are two different styles of LOW CARB pizza, including the Cauli-crust Pizza and Meatza… both are good substitutes for the high carb variety.

I also cook chili and soups usually in a Crock Pot (grok pot)… I love to use Bone Broth Stew for my soups/stews.

I grill meats & vegetables on my gas grill but most meals are cooked in the skillet  (see picture).  I cook bacon and eggs, pan sear all manner of meats including chicken, steak, pork chops and fish. I love using it because while you are pan searing your meats, you can add vegetables.  The meat ‘juices’ really add flavor to the veggies too. :)

One pot or one pan cooking, is one of my favorite cooking methods. The mixing of  the meat juices with the vegetables enhances the flavors of all the foods. Cooking with the skillet is so easy.

…the key?

Making sure you use enough animal fats or (butter is an animal fat)  when cooking meats and adding water or broth as needed when cooking vegetables.

The Black cast iron skillet pictured above was my Grandmother’s, she’s been gone for quite awhile now… but the skillet will always be her’s, I’m just borrowing it. :)

When I saw this picture today, I just needed to write a post in remembrance of my grand mother.  I am not sure how old this skillet is… but I feel sure it’s at least as old as I am…48 YRS YOUNG! :)  (I’m now 50 yrs young)

When I cook with it, I do feel linked back to my past. My grandmother was the greatest of  souls and she stood over a hot stove on many a day and night cooking for anyone and I am not exaggerating, she literally cooked for anyone.

I am so glad I inherited this skillet and since I cook with it on most days… I am often reminded of my grandmother. Love you granny! :)

    What a great tribute to your grandmother! And now she’s a part of your healthy lifestyle as well. :) I wish I had my mom’s skillet. Those older cast iron ones are the best. I bought one later in life and it just doesn’t compare.
